Sustainability and flexibility drive innovation in catering operations at Sydney’s spectacular Taronga Zoo


The Project

Nearly two million people visit Sydney’s spectacularly located Taronga Zoo each year to share world-class animal encounters and immersive zoo experiences that build lasting connections between people and wildlife.

With exciting initiatives realised through the 10-year implementation of the Centenary Plan, commercial planning identified the opportunity to reframe the complex catering operations to optimise returns, align to the zoo’s forward vision and reframe this strategic partnership.

A planned procurement process resulted in an innovative partnership model which enhances Taronga Zoo’s ability to capitalise on new opportunities to expand engagement and appeal to new markets, and fully realise its aspirations for integrated, zoo-wide sustainable operations.

A catering partner that shares a focus on sustainability and will incorporate these values throughout their operations empowers Taronga Zoo Conservation Society to deliver functions, events and dining experiences that support the Zoo’s educational mission and fund vital animal conservation work.

Our Role

Taronga Zoo’s exclusive catering partner delivers a range of hospitality experiences including cafes, functions at the Taronga Function Centre, and zoo experiences such as the Taronga Wildlife Retreat, Zoo Twilights, and Roar and Snore.

To achieve the required service standards for this internationally acclaimed destination, the procurement process was centred around a thorough understanding of existing and future requirements to build a sustainable foundation for future growth The contract was implemented through a two-stage process, with tender documentation emphasising environmentally sustainable practices and highlighting the opportunity to enhance the visitor experience through diverse and themed catering services.

The sought-after contract has resulted in unprecedented market engagement, an uplift in return, improved integration of catering services and enhanced sustainability initiatives to support the Zoo’s vision, from the sourcing of produce and products, through to equipment procurement and best practice in waste management.
